A soup out of willow grouse is extremely tasty. Because of the long boiling everything gets the nice flavour of the grouse.


  • one complete willow grouse/ptarmigan/riekko or two without breasts
  • 5l water
  • vegetable broth
  • spices
  • 1.200g (frozen)soup vegetables
  • 200g (frozen) onions
  • 200g fat/butter/oil

Boil the willow grouse in 5l of water for at least 3 hours. Take the willow grouse out of the water, let it cool down and remove the meat from the bones. Give the meat in very small pieces back into the water. You can do it with the fingers easily.

Add the vegetables, onions, fat and broth. If you have a good broth you do not necessarily need spices. Garlic, salt, pepper and oregano fit well. You can leave the broth and only use spices or mix them like you want.

Boil everything together for at least 10 minutes.
